Steak Seasoning
After traveling and cooking for friends and family over the last 20+ years, I decided I wanted a single Steak Seasoning. One that I ground on the regular and that I could be happy with acros a variety of proteins. We’ll this is that seasoning. “Name here” seasoning has strong black pepper notes paired with fresh ground dill and coriander. Great on a steak but should be tried to finish a Cesar salad!
Third Coast Blackened
This is a must have on any piece of meat about to hit high heat. This blend is reminiscent of a “Cajun” blackened, except on the Texas coast we leverage local herb-asious mexican oregano and jalapeño powder. Jalapeño is spicy, but it is still lower on the Scoville scale than just cayenne, so you get a more round smokey heat. Yes, and of course you’ll get the nice dark color you expect like any good blackened should.

Large grain kosher salt and basil flowers, 2 of the main ingredients in our cure, “The OG”.
BasEline
To properly cure salmon you only need a few simple ingredients. Sugar, salt, and time do the trick, but after nearly 15 years of curing we have perfected the ratio. Another factor is salt size, and acidity, after years of trying a variety of them, we have picked the most versatile for a home user. Our mix pulls the water from the fish and is replaces with a sweat brown sugar. Once your fish is done it’s left with a luxurious texture and brain fueling vitamins in the fishes natural fats that get left behind.
The OG (sessional)
This curing mix has a slightly lower sugar ratio, allowing you to taste more of the natural flavors of the fish which are complemented by copious amounts of basil flowers added to our cure.

A fresh ground batch of our Red Sauce: Enchilada mix.
Chili Gang
After years of making a truly original flavor in chili and a number of competition wins, we worked up a dried mix to get to a final amazing product in a shorter period of time. (note on number of ingredients and chili recipe later. )
Red sauce: enchilada
A killer base! Toss out all the enchilada sauce cans, maybe never buy one again? Our sauce mix is made with some of the most authentic combinations of peppers guaranteed to please. Mix with lard to create a rue, then by adding just stock you can create a killer basic enchilada sauce. Preferably more of a Ranchero flavor? Add tomatoes and onions and your almost there. 1tbs will help yield roughly 1cup of sauce.
